Caramel Apple Pork Chops



Yum! What a treat these were. The perfect combination of yummy pork chops and sweet apples. We will definitely be making these again. I enjoyed my apples and pork chop with a baked sweet potato and a glass of sparkling apple cider.

Caramel Apple Pork Chops

Ingredients:
1/2c soy sauce
1c apple juice
olive oil
4 3/4in thick pork chops
2tbs brown sugar
salt and pepper to taste
1/8 tsp ground cinnamon
1/8tsp ground nutmeg
2tbs butter
2 apples, peeled, cored and sliced

Directions:
Marinate pork chops for at least 2 hours in the soy sauce and apple juice.

Preheat oven to 425. Drizzle pork chops with olive oil and sprinkle with salt and pepper to taste. Roast pork chops for about 25 minutes. Remove from oven and let juices settle.

While chops are roasting, combine brown sugar, salt, pepper, cinnamon, and nutmeg in a small bowl. Add butter to a warm skillet and stir in brown sugar mixture and apples. Cover and cook until apples are tender. Remove apples with a slotted spoon and arrange on top of chops.

Continue cooking sauce until slightly thickened. Spoon sauce over apples. If desired, sprinkle with pecans.

Pork Chops and Applesauce Remix


I went to the local "farmer's market" this week. It's a store that sells local produce, meat, and dairy products as well as some other natural and home made grocery items. Amazingly enough, everything is priced comparably to our local store. The meat is even cheaper AND it's cut fresh daily. I am in love with this place. It is only 1/4 mile from our regular two grocery stores so I will definitely be shopping there for produce and meat from now on. Anyway, the point is that I bought these pork chops there for this recipe that popper up in my google reader. It was very good. I loved the apples. The only problem for me was baking the chops. I'm not really a fan of them cooked that way. I MUCH prefer them on the grill. So, these will most likely remain a warmer weather meal so we can cook them over charcoal.


Pork Chops and Applesauce Remix

Ingredients:
4 pork chops
2 tbs extra-virgin olive oil
2 tsp lemon zest
2 tsp Herbs de Provence (I just used basil and oregano)
Salt & Pepper
3 tbs butter
4 apples, cored and sliced
2 tbs all-purpose flour
2 tbs lemon juice
2 tbs sugar


Directions:
Preheat oven to 425*.


Drizzle the chops with olive oil. Sprinkle zest, herbs, and salt and pepper onto the pork and roast 25 minutes. Remove and let juices settle.

Melt butter in skillet over medium heat and saute apples for 12 to 15 minutes until very tender. Season with a pinch of salt and sprinkle the flour over the skillet, toss to combine. Squeeze the lemon juice over the skillet and sweeten with sugar.Arrange the apples over the pork to serve.

Lemon Garlic Pork Chops



I got this recipe from Lovestoeat's Weblog. They are very tasty and we will be making them again. Next time on the outdoor grill though since our apartment does not have good enough ventilation for the indoor grill. Which reminds me, I need to change the batteries in the smoke detectors.



Lemon Garlic Pork Chops

Ingredients:
2 center cut thick pork chops boneless (I used bone in since we prefer those)
3 tbs lemon juice fresh
3 tbs minced garlic
2 tbs Italian seasonings rub: Oregano, basil, parsley, etc…Great mix
salt and pepper to taste
2 tbs evoo

Directions:
Throw everything into a bag or bowl. Mix and cover. Marinate for 2 hours or as long as overnight. I did for about 9 hours while at work.

Heat grill to medium. Put chops on and grill about 5-10 minutes each side depending on thickness.

Fall off the Bone Slow Cooker Pork Ribs



I'm not usually a big pork person. I make it because Matt likes it and I can tolerate it. This recipe, however, changed my mind just a bit. These were so tasty and so good. They, quite literally, fell off the bones. Next time I will make sure to make them when we have people over though because we had a lot left over that we ended up tossing. The idea for this recipe came from the comments sections on a recipe on allrecipes.com. I pretty much just took bits and pieces from different recipes and comments.



Slow Cooker Ribs
Ingredients:
Pork Ribs
Garlic Salt
Onion Powder
Black Pepper
Barbecue Sauce (I used Sweet Baby Ray's Honey BBQ)

Directions:
Season ribs to taste with garlic salt, onion powder, and black pepper.

Place in crock pot and cover with BBQ sauce.

Cook on low 6-8 hours or until done. Mine only took about 4 1/2 hours since my crock wasn't even 1/2 full so be careful to not burn them!
